Here are just a few delicous recipes that I have cooked over and over.

Shrimp Fritters

1 c. shrimp
1 c. cooked rice
1 t. sugar
1/4 c. milk
1/2 c. flour
1/2 c. chopped green onions
2 t. baking powder
1 egg
Chop raw shrimp. Mix all of the ingredients together. Roll small portions in cracker crumbs. Fry in a non-stick skillet, in about 1/2 inch of cooking oil until golden brown.

Broccoli Cornbread

1 16oz. cottage cheese
1 large onion, chopped
1 box chopped broccoli
1 stick butter
4 eggs
2 boxes jiffy cornbread
season to taste
Thaw broccoli and drain. Melt butter. Mix all of the ingredients together. Bake in a 9x13 greased pan at 425 degrees for 30 minutes or until browned.

7-layer Tex-mex Dip

2-10 1/2 oz. cans bean dip
8 oz. jar guacomolie (seasoned)
8 oz. sour cream
1/2 c. mayonaisse
1 pkg. taco seasoning
3 1/2oz. can black olives, chopped
3 tomatoes
1 c. green onions
16 oz. shredded cheddar
Mix sour cream, taco seasoning, and mayonaisse. Bean dip is the first layer, then sour cream mixture. Layer the remaining ingredients on top. Serve with corn tortillas

Shrimp Dip

1-8oz. cream cheese
1/2 c. green onions
1 can, shrimp
1/2 c. miracle whip
creole seasoning
Allow cream cheese to soften. Drain shrimp thoroughly. Mix al lingredients together and chill. Serve with crackers.
