Welcome to my kitchen. Believe it or not as busy as I stay, I still have to cook. I have a few tried and true recipes that always please everyone. Try one and let me know what you think.


Mexican Casserole

1-2 lbs. ground meat
1/2 c. diced onion
1/2 c. diced bell pepper
2 T. chili powder
1 can mexi-corn
l large can tomato sauce
3/4 small bag medium egg noodles
12 slices of cheese
Brown ground meat and saute with onion
and bell pepper. Season to taste. Add
chili powder, tomato sauce, and mexi-corn.
Simmer about 10 minutes. Add cooked noodles.
Pour into a 9 x 13 baking pan. Cover with
cheese slices. Bake at 350 degrees until
cheese is thoroughly melted.



Stuffed Pistolettes

1 lb. ground meat
1 bag pistolette rolls
12 slices cheese
1 pack taco seasoning
Brown ground meat and season. Add taco
seasoning and fix taco meat according
to taco seasoning package. Deep fry
pistolette rolls. Slice through one side
with knife. Place one slice of cheese spoonful
and a of meat in each roll. Serve.



Chicken Casserole

3 boneless chicken breast
1-1/2 c. rice
1 c. milk
1 c. chopped brocolli
1 can cream of chicken soup
6 slices of cheese
Cook rice as usual. Saute breast in
butter until brown. Dice. Boil brocolli 6-7
min. In a pot melt the cheese with
the milk. Mix all ingredients together
and season to taste. Bake at 350
degrees for 15 minutes.
